Roast for a more festive lunch or dinner. Salt the skin, then bake first at 180°C for about 10 minutes, let the skin tighten, then reduce to 160° and bake for another 50 minutes. Ideally, let the roast sit on chopped root vegetables, poured with water or white wine.Use in 3 days.
